
I love Cafe Rio salads, but they can be too large and take a day's worth of calories by themself. Here is what I do sometimes when I have that Cafe Rio craving:
1 whole wheat flour tortilla (these can be easily made with ground whole wheat, you can also make it whatever size you like, but try to stay reasonable)
Black beans (or pinto beans if you prefer)
Steamed rice
Romaine lettuce
Grilled chicken breast (approx. 4 oz)
Diced tomatoes
Slight sprinkle of cheddar or parmesan cheese
I really love the Cafe Rio house dressing, but again, the calories are enormous. If you have to have dressing in order to eat a salad, have it on the side and dip your fork in the dressing. That way, you still get the taste, but actually use very little, so the calories don't add up too quickly.
I know it's not exactly the same, but it is still tasty for significantly less cost and calories.
